How to Use Dried Curry Leaves

Things You'll Need

  • Dried curry leaves

  • Broth

  • Oil or butter

  • Vegetables

  • Meat or tofu

  • Medium pot with a lid

Curry

Curry is both flavorful and fragrant, producing irresistible dishes. It is a very flexible herb that can be cooked with either fresh, dried or powdered. When cooking with dried curry leaves, only a third of the amount is necessary when compared with fresh leaves.

Step 1

Thoroughly wash the vegetables and peel if necessary. Dice the vegetables into bite-sized pieces and set aside.

Heat the pot over the stove at a medium high heat. Add the oil or butter and allow that to warm.

Step 3

Add the desired meat to the pot and lightly sprinkle it with salt, pepper and dried curry leaves. Brown the meat thoroughly. If you are using tofu, it is not necessary to brown.

Step 4

Add the vegetables and sauté them until medium soft.

Add the desired broth to the pot. Broths can consist of water, chicken broth, or for best results, coconut milk. Add enough broth to completely cover the meat and vegetables.

Step 6

Add an additional 1 tsp. of dried curry leaves. Additional seasonings can include ginger, brown sugar and cilantro.

Step 7

Bring the pot to a boil stirring occasionally. Reduce heat and allow it to simmer for at least 30 minutes. To obtain the strongest curry flavor and scent, consider simmering for at least 2 hours, stirring every 30 minutes.
