If you're a frequent sourdough baker, you ‌always‌ have sourdough discard handy. It's pretty great because there are SO many ways to use it. For example, you can add it to banana bread batter, fry it up by itself, or use it to make these really simple discard waffles and pancakes.

What makes this recipe much easier than others is that it uses pancake mix! This means there's less fuss when it comes to measuring out a bunch of ingredients. All you have to do is combine the pancake mix, water, oil (if making waffles), and sourdough discard. What you get are uniquely tangy pancakes and waffles—finally depleting your never-ending supply of sourdough discard!
