Hearty, healthy, and most importantly, full of flavor, this clean soup will leave you feeling full and satisfied but your waistline lean. Did we mention it's as easy as throwing all the ingredients into one pot?

Things You'll Need
1 medium onion, diced
5 garlic cloves, peeled and diced
4 celery stalks, diced
5 carrots, peeled and diced
1 1/2 cups lentils
1 1/2 cups cauliflower florets
1 teaspoon turmeric
1/2 teaspoon ground ginger
1 teaspoon ground coriander
1/2 tsp ground cumin
2 bay leaves
4 to 5 thyme sprigs
6 to 8 cups vegetable broth
2 cups baby kale or spinach
Salt and pepper
Chopped parsley (for garnish)
Directions
Add the onion, garlic, celery, carrots, lentils and cauliflower to the crockpot. Stir in the turmeric, ginger, coriander, cumin, bay leaves, thyme and vegetable broth. Place the lid on the crockpot, set it to high, and allow the soup to cook for 6 hours until the lentils are soft.
Once the soup is done cooking, remove the bay leaves and thyme sprigs. Use a potato masher or the back of a ladle to mash up about half of the lentils in the crockpot. This will give the soup a heartier stew-like consistency.
Add the baby kale or spinach to the crockpot and mix the greens into the soup until wilted. Season the soup to taste with salt and pepper, garnish with chopped parsley and serve!
