1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon (optional)
1 tablespoon sugar
1 egg
3/4 cup plant-based or dairy milk
1 tablespoon oil or melted butter plus more for frying
1 teaspoon vanilla extract

In a bowl, combine all the dry ingredients.

Lightly beat the egg in a smaller separate bowl.

Combine the egg, milk, oil and vanilla. Whisk well.
