This cookie recipe is one of my favorites because it's similar to those soft, store-bought melt-in-your-mouth sugar cookies that come in the plastic clamshell packaging. Y'know, the ones with the pink frosting?
Even though those cookies are absolutely divine, freshly baked cookies win my heart every single time...especially if they can be made in less than 30 minutes. And spoiler alert, that's how long it actually takes to make these cookies. Woo!

Things You'll Need
2 baking sheets
Parchment paper or silicone mats
Large bowl or bowl of stand mixer
Hand whisk, electric mixer or stand mixer fitted with paddle attachment
Rubber spatula
Small bowl
1/2 cup unsalted butter, melted and cooled
1/4 cup granulated sugar
1/4 cup light or dark brown sugar
1 egg
1 tsp. vanilla extract
1 1/2 cup all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1. Mix butter and sugars
Preheat oven to 325°F. Line two baking sheets with parchment paper or silicone mats.
In a large mixing bowl or bowl of stand mixer, combine the 1/2 cup melted butter, 1/4 cup granulated sugar and 1/4 cup brown sugar. Mix until fully combined.
2. Add egg and vanilla extract
Mix in egg and 1 tsp. vanilla extract, and whisk until smooth.
3. Stir in dry ingredients
Stir in dry ingredients: 1 1/2 cup all-purpose flour, 1/2 tsp. baking powder, 1/2 tsp. baking soda and 1/2 tsp. salt. Mix until no dry spots remain.
Tip
Use a rubber spatula to scrape down the sides and bottom of the bowl to get rid of any flour pockets!
Use small cookie scoop or roll about 1 1/2 Tbsp. of cookie dough into a ball.
5. Roll in star sprinkles
Add star sprinkles to a small bowl. Roll the top of each cookie dough ball in the star sprinkles.
Place cookies, sprinkle side up, on a lined baking sheet, about 3 to 4 inches apart.
6. Bake
Bake the sugar cookies for 9 to 11 minutes, or until edges are set. Let rest on the baking sheet for about 5 minutes, then transfer the cookies to wire rack to cool fully. Enjoy!
To store the sugar cookies, keep in an airtight container at room temperature for up to 1 week...if they even last that long!
