2 15-ounce cans of cannellini beans
1/2 white or yellow onion, diced
3 celery stalks, sliced
1/3 cup Buffalo sauce, plus more for topping
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup panko breadcrumbs
1/2 cup gorgonzola or blue cheese
1/4 cup butter
Fresh parsley, for topping
Scallions, sliced, for topping

Want to make this recipe dairy-free? Use plant-based butter and dairy-free Buffalo sauce, and omit the cheese.
1. Cook onions and celery
Preheat the oven to 400F. In a large oven-safe pan over medium heat, melt the butter.
Tip
If you don't have an oven-safe pan, cook the onion and celery in any pan you have. You can then transfer the cooked vegetables to a greased baking dish, then mix in the other ingredients as listed in Step 2.
Cook the onions and celery until soft, about 5 to 7 minutes.
Tip
Feel free to customize your dish with other vegetables. For example, try adding diced carrots or bell peppers. Want a spicier kick? Dice a few jalapeno peppers and toss them in.
2. Add other ingredients
To the pan, add the beans, Buffalo sauce, garlic powder, salt and black pepper. Mix well.
Tip
For a creamy dip, mash some of the beans with a potato masher or large spoon. You can also add extra gorgonzola or blue cheese (or even chunks of cream cheese!) to the bean mixture.
3. Bake
Turn off the heat. Top the bean mixture with panko, gorgonzola and a drizzle of Buffalo sauce.
Bake for 8 to 10 minutes, or until the cheese is melted and bubbly.
4. Serve
Top the Buffalo bean dip with chopped fresh parsley and scallions. Serve immediately with crackers, potato chips, tortilla chips or celery sticks.
