Tools You’ll Need

  • 3 1/2 cups heavy whipping cream
  • 2 boxes instant vanilla pudding mix (3.4 ounces each)
  • 1/2 - 1 tsp. mint extract
  • Green gel food coloring
  • 9-inch premade graham cracker crust with pan
  • White granulated sugar (optional, for garnish)
  • Canned whipped cream
  • Maraschino cherries
  • Mixer with mixing bowl
  • Rubber spatula
  • Offset spatula

1. Make pudding mix

Pour heavy cream into the mixing bowl. Add both boxes of instant pudding mix. Whisk on low speed, scraping down the sides of the bowl as needed.

2. Add color and mint

Add gel food coloring and 1/2 to 1 tsp. mint extract, to taste. Whisk on high speed until the mixture is thick. Be careful not to overwhip, and make sure to scrap down sides in case some of the pudding mix is stuck.

3. Fill pie crust

Add the entire mixture to the graham cracker pie crust.

4. Smooth the filling

Use an offset spatula or the rubber spatula to smooth out the filling. Chill the pie in the fridge for 1-2 hours (or overnight if you want to make this in advance).

5. Make colored sugar (optional)

Make colored sugar for an optional garnish, if desired. While the pie chills, add 1-2 drops of green food coloring gel to white granulated sugar and mix well; adjust color as needed.

6. Decorate with cream

Remove pie from fridge apply a decorative border of canned whipped cream.

Tip

Canned whipped cream will not hold it’s shape well overnight, so add it not long before serving. Alternatively, you can make your own whipped cream (mixing heavy whipping cream with a small amount of powdered sugar), which will hold it’s shape better.

7. Decorate with cherries

Add maraschino cherries to the cream border. Sprinkle on the colored sugar, if using. Serve and enjoy!
