What makes this recipe much easier than others is that it uses pancake mix! This means there's less fuss when it comes to measuring out a bunch of ingredients. All you have to do is combine the pancake mix, water, oil (if making waffles), and sourdough discard. What you get are uniquely tangy pancakes and waffles—finally depleting your never-ending supply of sourdough discard!

Part 1: Sourdough Discard Pancakes
Things You'll Need
Large mixing bowl
Whisk
Skillet
Spatula
Cooking spray
1 cup water
1/2 cup sourdough discard
Optional toppings: fruit, syrup, powdered sugar
1. Combine ingredients in mixing bowl
In your mixing bowl, combine 1 cup pancake mix, 1 cup water, and 1/2 cup sourdough discard. Whisk until batter is mostly smooth with few lumps. Transfer batter to squeeze bottle.
2. Cook pancakes on low heat
Heat skillet on low heat, then lightly coat with cooking spray. Use squeeze bottle to draw hearts or design of choice.
After 2 to 3 minutes, the pancake surfaces should appear bubbly and a bit dry. Flip with spatula, then cook for another 2 to3 minutes, or until lightly golden brown. Repeat with remaining pancakes.
Tip
Keep pancakes in a warm oven until ready to serve all of them!
3. Add toppings and serve
Top with fruit, powdered sugar, maple syrup, or anything you like!
Part 2: Sourdough Discard Waffles
Things You'll Need
Large mixing bowl
Whisk
Waffle maker (we used a heart-shaped one)
Tongs
1/2 cup water
1/4 cup neutral oil (such as canola or vegetable)
1/2 cup sourdough discard
Cooking spray
Optional toppings: fruit, syrup, powdered sugar, whipped cream
1. Combine ingredients in mixing bowl
In your mixing bowl, add 1 cup pancake mix, 1/2 cup water, 1/4 cup neutral oil, and 1/2 cup sourdough discard. Whisk until fully combined. The batter should be slightly thick.
2. Cook batter in waffle maker
Allow waffle maker to warm up, then lightly coat with cooking spray. Add batter to waffle maker. Cook for about 4 minutes, or until golden brown and crispy. Use tongs to carefully remove waffles.
3. Add toppings and serve
Top with fruit, powdered sugar, maple syrup, whipped cream, or anything you like!
