Whether you live alone, prefer freshly made banana bread, or don't have space for leftovers, this single-serving banana bread recipe will fit the bill. Read on to learn how to make it!
Things You'll Need
1 ripe banana
1 egg
2 or 3 tablespoons light or dark brown sugar
1 tablespoon milk
1/2 teaspoon vanilla extract
1 tablespoon oil
1/4 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons walnuts or pecans, roughly chopped
Butter, for greasing the dish
Tip
Use a neutral oil, such as canola oil, vegetable oil, grapeseed oil, or light olive oil. These options have a mild flavor that won't overpower the banana bread. You can also use melted butter.
1. Prepare the liquid ingredients
Preheat the oven to 375° F. Grease a mini loaf dish or large ramekin (about 14 or 16 oz.) with oil or butter.
Peel the banana and place it in a bowl. Mash it with a fork.
Add the egg, brown sugar, milk, vanilla extract, and oil.
Tip
You can use cow's milk or nondairy milk, including almond milk, oat milk, or soy milk.
Stir until just combined.
2. Add the dry ingredients
Add all-purpose flour, baking soda, and salt.
Tip
To make this recipe gluten-free, use all-purpose gluten-free flour.
Mix until just combined.
3. Add nuts
Add walnuts or pecans to the batter. Using a spatula, fold to combine.
Tip
Feel free to leave out the nuts or use chocolate chips, raisins, or other dried fruits.
4. Bake
Transfer the batter to a mini loaf dish or large ramekin.
Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
Let it cool slightly and then run a knife around the edge to help release the bread. Enjoy with a pat of butter and drizzle of maple syrup if desired.
