As far as appetizers go, you can't go wrong with deviled eggs. Not only are they delicious and inexpensive but they're easy to customize too. Just look at this trio of deviled egg varieties: bloody mary (yes, as in the classic cocktail!), smoked salmon and dill, and sour cream and onion.

Bloody Mary Deviled Eggs
Things You'll Need
4 hard-boiled eggs, sliced lengthwise
3 Tbsp. mayonnaise
1 tsp. Dijon mustard
1/2 tsp. cornichon pickle juice
1/2 tsp. hot sauce
1/4 tsp. salt
1/4 tsp. black pepper
4 cornichons, sliced lengthwise
Celery matchsticks
Celery leaves
Old Bay seasoning
Tip
Cut the celery matchsticks so they're small and thin enough to fit into half an egg white.
1. Make filling
Separate the egg yolks from the egg whites. Set aside the egg whites.
To the egg yolks, add mayonnaise, Dijon mustard, cornichon pickle juice, hot sauce, salt, and black pepper.
Tip
For a spicier flavor, add more hot sauce.
Mash until combined and creamy.
2. Fill egg whites
Transfer the egg yolk filling to a resealable plastic bag. Snip one corner of the bag.
Tip
You can also use an icing piping bag. In this case, use a wide, round piping tip.
Pipe the egg yolk mixture into the egg whites.
3. Garnish
Top each deviled egg with a thinly sliced celery matchstick, celery leaf, and sliced cornichon. Sprinkle with Old Bay seasoning.
Tip
For a stronger Old Bay flavor, sprinkle the seasoning on a plate. Dip the egg whites face down into the seasoning before filling them.
Smoked Salmon & Dill Deviled Eggs
Things You'll Need
4 hard-boiled eggs, sliced lengthwise
3 Tbsp. mayonnaise
1 tsp. Dijon mustard
1 tsp. lemon juice
1 Tbsp. dill, chopped
1/4 tsp. black pepper
2 Tbsp. smoked salmon, finely sliced
1. Make filling
Separate the egg yolks from the egg whites. Set aside the egg whites.
To the egg yolks, add mayonnaise, dill, Dijon mustard, lemon juice, and black pepper.
Tip
You can also use apple cider vinegar or pickle juice in place of lemon juice.
Mash until combined and creamy.
2. Fill egg whites
Spoon the filling into a resealable plastic bag. Cut off one corner of the bag.
Pipe the filling into the egg whites.
3. Garnish
Top each deviled egg with smoked salmon and fresh dill.
Sour Cream & Onion Deviled Eggs
Things You'll Need
4 hard-boiled eggs, sliced lengthwise
3 Tbsp. sour cream
1/2 tsp. onion powder
1/4 tsp. garlic powder
1/2 tsp. salt
1/4 tsp. black pepper
Chives, finely chopped, for garnish
1. Make filling
Separate the egg yolks from the egg whites. Set aside the egg whites.
Add sour cream, onion powder, garlic powder, salt, and black pepper.
Mash until combined and creamy.
2. Fill egg whites
Transfer the filling into a resealable plastic bag. Close tightly and then cut one corner of the bag.
Pipe the filling into the egg whites.
Garnish with chopped chives.
Tip
To emphasize the sour cream and onion flavor, top with crushed sour cream and onion chips. The crunchy texture will also offer a delicious contrast against the creaminess of the deviled eggs.
