Things You'll Need
6 large eggs
1/4 tsp. salt
1/4 tsp. black pepper
2 cups spinach, washed and dried, roughly chopped
5 mini breakfast sausage links, cut up into bite-size pieces (about 3/4 cup)
1/2 cup crumbled feta cheese
1/2 cup canned diced tomatoes, drained (or use fresh)
1/4 cup shredded cheddar (optional)
1. Crack the eggs
Preheat your oven to 350°F. Crack all 6 eggs into a large mixing bowl.

2. Add salt and pepper
Add salt and pepper to the eggs.

3. Chop the spinach
Roughly chop the spinach into bite-size pieces and set aside.

4. Chop the sausage
Slice the sausage links into bite-size pieces and set aside.

5. Combine the ingredients
Add the diced tomatoes, crumbled feta, sliced breakfast sausage, and chopped spinach to the egg mixture. Mix until everything is fully coated.

6. Fill the cupcake pan
Spray a nonstick 12-cupcake pan with cooking spray. Spoon the mixture evenly into each cavity.
