Things You'll Need
1 Tbsp. unsalted butter, softened
1 1/2 Tbsp. white sugar
1 Tbsp. lightly beaten egg
1/2 tsp. vanilla extract
3 Tbsp. all-purpose flour
1 1/2 tsp. baking powder
Pinch of salt (about 1/16 tsp.)
1 Tbsp. rainbow sprinkles plus 1 tsp. for topping
1. Mix the wet ingredients
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
In a small bowl, combine the butter and sugar. Beat with a fork until creamy.
Add a lightly beaten egg and vanilla extract.
Tip
Use the remaining beaten egg for additional cookies or an omelet.
Mix to combine.
2. Add the dry ingredients
Add the flour, baking powder, and salt to the bowl. Mix to combine. The dough will be sticky, which is totally normal. Use a small spatula to mix the dough with ease.

If needed, use gluten-free all-purpose flour instead of regular flour.

Add 1 tablespoon rainbow sprinkles. Using a small spatula, fold the sprinkles into the dough.

Rod-shaped sprinkles will give the cookie a classic birthday cake look but feel free to use other varieties. Also, to make the cookie even sweeter, fold in 1 tablespoon white chocolate chips.
Scoop out the dough and place it on the parchment-lined baking sheet. Flatten it into a disc shape, add another teaspoon of sprinkles on top, and press them into the dough.
Bake for 10 to 12 minutes or until the edges are set. The center should be slightly soft; it will set as it cools.
