Quick Recipe Overview
SERVINGS: 2 tarts (about 6 servings)
PREP TIME: 15 minutes
BAKE TIME: 20–
25 minutes
TOTAL TIME: 35–40 minutes
Things You'll Need
2 puff pastry sheets, thawed
16 oz. asparagus spears, ends trimmed
6 to 8 prosciutto slices
5 oz. herbed cheese
1/4 cup peas
Olive oil
Salt, to taste
Ground black pepper, to taste
Tip
Feel free to use fresh or frozen peas. If you'd like to use frozen peas, put them in a colander under hot running water to thaw.
1. Prepare the puff pastry
Preheat the oven to 400°F. Line a baking sheet with parchment paper. Place a sheet of thawed puff pastry on the baking sheet. Roll up the edges to create a border.
2. Add the cheese and asparagus
Crumble the cheese into pieces. Sprinkle half on the sheet of puff pastry.
Top with half of the asparagus spears.
3. Make the prosciutto flowers
Cut a slice of prosciutto in half lengthwise. Fold it into a fan shape to create a flower.
Add it to the tart. You can then fill in spaces with prosciutto "roses" by cutting a slice into thirds or fourths and then rolling up each strip.
Tip
To make this asparagus tart vegetarian, simply skip the prosciutto.
4. Add the peas, oil, and seasonings
Sprinkle 2 tablespoons of peas on the tart. Brush the vegetables with olive oil and season with salt and pepper.
Tip
Note that the cheese and prosciutto are already quite salty. If you'd like to limit your salt intake, skip the additional salt.
5. Bake the tart
Bake the tart for 20 to 25 minutes or until the edges of the puff pastry are golden brown and flaky.
Repeat the entire process to make the second tart.
Let it cool slightly and then use a large knife to slice each tart into nine equal-size pieces. Enjoy!
