Blueberry Filling

Things You'll Need

  • 3/4 cup fresh or frozen blueberries

  • 1 Tbsp. all-purpose flour

  • 2 tsp. white sugar

  • 1 Tbsp. lemon juice

  • 1/2 tsp. vanilla extract

Tip

For a delicious twist, replace some or all of the blueberries with other types of berries. Raspberries, blackberries, and chopped strawberries are all tasty options.

1. Combine the blueberry filling ingredients

In a bowl, add the blueberries, flour, white sugar, lemon juice, and vanilla extract. Mix until the blueberries are fully coated with flour.

Tip

If your blueberries are very sweet, feel free to skip the sugar. You can also use maple syrup or honey if you'd like.

2. Heat the blueberries in the microwave

If needed, transfer the blueberry mixture to a microwave-safe ramekin or dish.

Heat in the microwave for 1 minute, pausing to mix and mash the blueberries halfway through. Set aside.

Tip

If you're using frozen blueberries, heat for another 30 seconds to 1 minute to make sure they're completely thawed.

Crumble Topping

  • 1/4 cup old-fashioned oats

  • 1 Tbsp. all-purpose flour

  • 1 Tbsp. brown sugar

  • 1 Tbsp. unsalted butter, melted

  • 1 scoop vanilla ice cream

1. Combine the topping ingredients

In a bowl, add the oats, flour, brown sugar, and melted butter. Mix until the oats are completely coated in butter.

2. Add the topping

Add the crumble topping to the blueberry mixture. Heat for 30 seconds and then let cool for 10 minutes.
