  • 1/8 tsp. salt

  • Whipped cream, for topping

  • Mini chocolate chips, for topping

Tip

Be sure to use canned pumpkin puree, not pumpkin pie mix.

1. Mix the wet ingredients

Grease a mug with butter or oil. Add the pumpkin puree, oil, milk, and vanilla extract. Stir to combine.

Tip

You're welcome to use plant-based milk, such as oat milk or almond milk.

2. Add the dry ingredients

To the mug, add the flour, sugar, baking powder, pumpkin pie spice, and salt.

3. Prepare the batter

Mix the wet and dry ingredients until just combined. Avoid overmixing.

Tip

At this point, you can fold 1 or 2 tablespoons of mini chocolate chips or chopped nuts into the batter. Alternatively, you can save these ingredients for the topping.

4. Microwave the cake

Heat the pumpkin mug cake for 60 seconds in the microwave. Insert a toothpick into the cake; if it's still wet, heat for another 10 seconds until set.
