The dish gets its iconic flavor from pickle juice and diced dill pickles. However, the cooking process tones down both ingredients, creating more balanced tangy notes. The soup also uses sour cream, which provides a satisfying texture.

Things You'll Need

  • 3 Tbsp. unsalted butter or olive oil

  • 1 yellow onion, finely diced

  • 2 large carrots, peeled and finely diced

  • 3 russet potatoes, peeled and cubed

  • 3 whole dill pickles, diced

  • 1/2 cup dill pickle juice

  • 5 cups vegetable broth

  • 1/2 cup sour cream

  • 1 bunch fresh dill

  • Bread, for serving

1. Sauté the vegetables

In a large pot over medium-high heat, warm the butter or oil. Sauté the onions and carrots for 5 minutes.

Add the diced pickles and pickle juice. Cook for 2 to 3 minutes.

Add the potatoes. Cook for 5 minutes.

2. Add the broth

Pour the broth into the pot. Simmer for 15 to 20 minutes, or until the potatoes are easily pierced with a fork.

Tip

For a soupier dish, add an extra cup of broth. For an extra- chunky version, use 4 cups of broth.

3. Add sour cream

Scoop out 1 cup of hot broth from the pot. If needed, you can strain the cup of soup to minimize chunkiness.

In a bowl, combine the broth with sour cream, then whisk until evenly combined. This will ensure the sour cream doesn't curdle when you add it to the soup.

Tip

Feel free to use vegan sour cream to make a dairy-free soup.

Pour the sour cream mixture into the pot, then mix well. Taste the soup and add salt and black pepper as needed.

4. Serve
