Tip

Instead of graham crackers, you can also crush sugar cookies or gingersnaps. Another option is to use gluten-free graham crackers for a gluten-free pie.

1. Mix the crust ingredients

Preheat the oven to 350°F. Grease a ramekin.

In a bowl, combine the graham cracker crumbs, melted butter, maple syrup, and salt.

2. Bake the crust

  • 3 Tbsp. brown sugar

  • 1 tsp. pumpkin pie spice

  • 1/8 tsp. salt

  • 1/2 teaspoon vanilla extract, optional

  • Whipped cream, for topping

  • Chopped nuts, for topping

1. Mix the filling ingredients

While the crust is baking, prepare the filling. In a bowl, combine the pumpkin puree, egg, milk, brown sugar, pumpkin pie spice, salt, and vanilla extract, if using.

Feel free to use non-dairy milk, such as oat milk or almond milk.

2. Add to the crust

Pour the filling on top of the crust.
