Beet Hummus

Things You'll Need

  • 1 medium beet, roasted (or 2 small beets)

  • 2 or 3 garlic cloves

  • 15 oz. canned chickpeas, drained

  • 2 Tbsp. tahini

  • 2 Tbsp. lemon juice

  • 1 tsp. salt

  • 1/2 tsp. black pepper

  • 3 Tbsp. olive oil

  • 3 Tbsp. water

Tip

To roast a beet, wrap it in aluminum foil and place it on a baking sheet. If you're roasting two small beets, you can wrap them together. Roast in the oven for 30 to 60 minutes (depending on the size) at 400°F or until easily pierced with a fork. Let cool and then remove the skin.

1. Chop the beets and garlic

Cut the roasted beets into large chunks. Add the chunks to a food processor along with the garlic cloves. Process until finely chopped.

2. Add the chickpeas and other ingredients

Add the chickpeas, tahini, lemon juice, salt, and black pepper. Pulse to combine.

3. Add the oil and water

Slowly pour in the olive oil as the food processor is running. Next, add the water and puree until the hummus develops your ideal texture. Taste and add more oil, water, or salt as needed.

Tip

If your food processor doesn't have a spout in the cover to pour in ingredients, you can add the olive oil 1 tablespoon at a time, pausing between each addition. Repeat with the water.

Vegetable Heart Skewers

Things You'll Need

  • Carrots, sliced into 1/4-inch-thick coins

  • Radishes, sliced into 1/4-inch-thick coins

  • Toothpicks

  • Mini heart cookie cutter

Tip

You can find small heart cookie cutters in the clay section of most craft stores.

1. Cut the hearts

Place the carrot slices on a cutting board. Press the cookie cutter into the carrots, making sure to cut all the way through.

Repeat with the radish slices.

Tip

The scraps can be quick pickled and enjoyed as a topping for salads, tacos, and avocado toast. Alternatively, you can chop up the scraps and use them in fried rice.

2. Place the vegetables on toothpicks

Add two to three vegetable hearts per toothpick.

Tip

If the carrots are too hard to spear with a toothpick, place them in a bowl and cover them with water. Microwave for about 20 seconds to slightly soften them.

Tomato-Mozzarella Skewers

Things You'll Need

  • Cherry or grape tomatoes

  • Mozzarella, cut into cubes

  • Toothpicks

Tip

For a dairy-free version, use vegan mozzarella.

Place the tomatoes and mozzarella on toothpicks. Add a tomato and cube of mozzarella to each toothpick.

  • Pita bread, cut into triangles

  • Crackers

  • Celery sticks
