Whichever recipe you use, one step that will help you get a golden, crispy crust is by finishing the cooking process in a moderate oven. Step 1
Pre-heat your oven to 350 F. Follow your recipe directions for preparing, breading and frying your chicken on your stove top. Fry until each piece is a rich, golden brown. Turn the pieces only once.

Remove the chicken pieces and place them on a paper towel or parchment paper to drain off some fat. Season the chicken lightly with salt and pepper.

Place cooling rack onto a baking sheet and place the chicken on it. This will keep the chicken off the bottom of the pan.

Put the chicken in the pre-heated oven to finish cooking for another 10 to 15 minutes, or until its internal temperature reaches 160 F.

Transfer the chicken to a warmed serving plate or platter. Keep it warm and let it sit for about 5 minutes.

Tip
Take care not to break the crust when transferring the chicken from the oil to the oven. You can make the coating stick better by refrigerating the breaded chicken for half an hour before frying it.

Always have the handle of the frying pan pointing towards the center of the stove to avoid unfortunate accidents.
