Enter the peach bellini. Peaches are at their peak in the summer, and they make for a refreshing drink when they are blended and topped off with some bubbly champagne or sparkling water. With this peach bellini recipe, you can enjoy a special drink any night of the week or even with brunch.

Things You'll Need

  • 2 large peaches, peeled, sliced, and pitted

  • 2 Tbsp. fresh lemon juice

  • 2 Tbsp. sugar

  • Champagne or prosecco (for traditional bellinis) or sparkling water (for nonalcoholic bellinis)

1. Puree the peaches

Puree the peach slices in a food processor with the sugar and lemon juice.

Tip

Traditional bellinis are made with white peaches, but if you aren't able to find them in your area, just use regular peaches like we did in this recipe. Regular peaches provide your cocktail with a bright orange color; white peaches will cause the cocktail to appear more pink.

2. Strain the peach puree

Strain the peach puree through a fine mesh strainer. Discard the pulp. You should be left with about 1/2 cup of juice.

3. Create the cocktail

Pour half of the strained peach puree into each glass.

Pour champagne into each glass until full. Garnish with a fresh peach slice.

Tip

For a nonalcoholic version, simply swap the champagne for sparkling water.
