A supply of breadcrumbs in the freezer can enable you to add a special touch to a variety of savory dishes, including pasta, soup and crunchy coatings on meat or poultry. Although it is easy to purchase ready-made breadcrumbs at the market, making your own takes little effort or time. Create breadcrumbs with just the flavor you desire to add to your recipes. Try making Italian breadcrumbs from plain breadcrumbs and enjoy the homemade goodness.
Step 1
Select any type of fresh bread that is not old or stale. Although you may feel tempted to use stale bread for breadcrumbs, you will likely detect the staleness of the bread in the breadcrumbs.

Step 2
Place the bread slices onto the cutting board and cut off the crusts with the bread knife. Discard the crusts or use them for another purpose.
Step 3
Spread the bread slices in a single layer on the baking sheet and place the baking sheet into a 300-degree oven for about eight minutes. Flip the bread slices after 8 minutes and bake them for an additional eight minutes. Remove the bread and allow it to cool completely.
Step 4
Break up the bread into halves or quarters and place the bread into the food processor. Fill the food processor bowl to the capacity line and process the bread until it becomes coarse crumbs.
Step 5
Measure out 4 cups of bread crumbs and place them into a large bowl. Add the herbs and spices to the breadcrumbs and stir the ingredients well.
Step 6
Pour the Italian breadcrumbs into a plastic zipper bag and seal the bag. Store the breadcrumbs in the freezer until you are ready to use them.
