Overview
Easter is always a welcome season after the cold months of winter. Spring is usually just around the corner and we start to see the warming effects on the world around us. Why not try something new this year and make your own Easter egg candy treats? These are easy, fun and don't require any special equipment or supplies.
Things You'll Need
To make these filled Easter egg treats, you will need: Candy melts in various colors or almond bark squares, plastic eggs (opening vertically), peanut butter, butter, powdered sugar, sweetened condensed milk, and coconut.
Melt the Candy Melts
Melt the candy melts in the microwave or over a double boiler. Especially in the microwave, the candy melts will keep their shape until you stir them, so be careful not to burn the candy. Start with a 1.5 minute setting and then add more time if necessary.
Layer the Candy Melts in the Eggs
Spoon a small amount of melted candy into a plastic egg and smooth it up the sides to create a layer of candy over the entire shell. Set this aside to cool.
Make the Fillings
While the candy is cooling in the shells, make the fillings. The peanut butter filling is 1/4 cup butter, 1.5 cups peanut butter, 3 cups powdered sugar and 3 or 4 tablespoons of milk blended in a mixer for a few minutes. The mixture will be dry and clumpy. The coconut filling is 1 can sweetened condensed milk, one 8-ounce bag of coconut, 1 teaspoon of vanilla and 1.5 cups powdered sugar.
Fill the Centers with Peanut Butter
By now the candy should be set and ready to fill. Press the peanut butter into the center of the eggs, being careful to leave space to cover with more candy.
Fill the Centers with Coconut
Fill some of the eggs with the coconut filling. It will be a bit softer and will need some extra room to cover with more candy.
Fill with More Candy
Cover the fillings with more candy. If the melted candy is cool at this point, just warm it in the microwave again. Stir well and don't thin with anything. When the candy eggs are cool, squeeze slightly sideways and endways and they should pop out of the plastic forms. If the candy sticks, dip the plastic side of the egg in warm water and then squeeze it out.
Decorate the Eggs
The candy eggs are pretty just as they are, but you can add decorative pieces by painting a small dot of the melted candy to the back and pressing in place.
