If you haven't had an icebox cake before, it's essentially layers of whipped cream and cookies chilled in the fridge until set. As the cake chills, the cookies soften, and the flavors develop, and what you get is a very light, fluffy, and delicious dessert — the perfect treat to beat the summer heat!

Things You'll Need

  • 2 14.3 oz. packages of Oreos

  • 3 oz. cream cheese, room temperature

  • 3 cups heavy cream, chilled

  • 1 Tbsp. vanilla extract

  • 1/3 cup powdered sugar

  • Pinch of salt

1. Whip cream cheese until fluffy

In a large mixing bowl, whip room temperature cream cheese until it's light and fluffy, about 2 to 4 minutes.

2. Beat mixture until fluffy

Add the heavy cream, vanilla extract, and salt. Beat on medium speed until soft peaks form and then add the powdered sugar. Mix until you reach stiff peaks and the whipped cream is light and fluffy.

Have you overmixed the whipped cream and now it's chunky? Stir in a splash of heavy cream at a time until it smooths out.

3. Layer Oreos and whipped cream

In a 9 by 13-inch baking dish, add a single layer of Oreos. Top with whipped cream using an offset spatula to completely smooth it out.

4. Repeat the layering

Repeat step 3 as many times as needed until you reach the top of the baking dish.

5. Top with crushed Oreos

Top the icebox cake with crushed Oreos. Cover and chill in the fridge for at least 4 hours before serving.
