Simple, sweet, and delightfully pink, this single-serving strawberry cake might very well be your new favorite dessert. It's so easy to make at home, and prep time takes just 5 minutes.
A vanilla cake batter is studded with strawberries and then cooked in the microwave (as a mug cake) or in the oven. The latter will take longer, but it's certainly an option if you don't have access to a microwave.

Once the cake has cooled, coat it with pink icing and top it off with diced strawberries. And just like that, you have an adorable mini strawberry cake!

Things You'll Need
1/4 cup all-purpose flour
2 Tbsp. sugar
1/2 tsp. baking powder
3 Tbsp. milk
2 Tbsp. unsalted butter, melted
1/2 tsp. vanilla extract
2 or 3 strawberries, stems removed and diced
1/3 cup vanilla frosting
Red or pink food coloring
1. Mix the dry ingredients
If you'd like to use the microwave, grease a microwave-safe mug. If you'd like to use the oven, grease a small ramekin or baking dish and preheat the oven to 350°F.
In a bowl, combine the all-purpose flour, sugar, and baking powder. Mix well.
2. Add the liquid ingredients
Add the milk, melted butter, and vanilla extract to the dry ingredients. Stir until the batter is thick and combined.
3. Fold in the strawberries
Add the diced strawberries and fold to incorporate, taking care to avoid overmixing the batter.
4. Bake the cake
Transfer the batter to the greased dish and cook in the microwave on high for 2 minutes. You can also bake it in the oven for 23 to 25 minutes or until the center comes out clean when you stick a toothpick into it.
Tip
If the cake is not ready after 2 minutes in the microwave, continue cooking it at 15-second intervals.
5. Let the cake cool
Let the cake cool completely and then remove it from the baking dish.
6. Dye the icing
Add red or pink food coloring to the vanilla icing. Red food coloring will yield a pastel pink color. If you'd like a more saturated hue, use pink food coloring. You could even combine the two to achieve the perfect pink shade.
Tip
Food coloring tends to darken over time, so avoid adding too much.
7. Ice the cake
Spread the icing on the cooled cake.
Top with more diced strawberries and then dig in!
