Tip
To crush Oreos into crumbs, quickly blitz them in a food processor. You can also place them in a resealable sandwich bag and roll them with a rolling pin.
Press the crumbs into an even layer. You can use the back of a spoon or the bottom of a small measuring cup. Set aside.
2. Prepare the cream cheese mixture
In a separate bowl, combine the softened cream cheese, sugar, peppermint extract, and vanilla extract. Using a fork, beat the ingredients until smooth and combined.
Tip
If you'd like to give the cheesecake a light pink hue, add a few drops of red food coloring. You can also fold in about 1/2 to 1 tablespoon of crushed candy canes for some crunch.
Add the whipped topping. Fold to combine, taking care to avoid overmixing.
3. Chill the cheesecake
Scoop the cream cheese mixture on top of the Oreo crust, smoothing out the top as needed. Cover the dish and refrigerate for 6 hours or overnight.
Tip
If you'd like to enjoy the cheesecake sooner, let it chill for 30 minutes. The texture won't be as firm, but it will still taste delicious.
4. Garnish and serve
Top the chilled cheesecake with crushed candy canes and Oreos. Then, dig in!
